  • Store.  Pour leftover celery juice in a mason jar and store in the refrigerator for up to 1 day.

There’s a lot of hype out there about celery juice benefits claiming to be a cure-all for many diseases.  Many of these claims are unsupported by science and are in need of further studies.  However, whether you consume nutrient dense fruits and vegetables whole, blended or juiced, incorporating more fruits and vegetables into your diet helps promote wellness.  

  • Antioxidants. Celery juice is rich with vitamin C, beta-carotene and flavonoids. The phytonutrients found in celery include phenolic acids, luteolin, quercetin and kaempferol.  Antioxidants help protect cells, blood vessels, and organs from oxidative damage.  Antioxidant rich diets may contribute to decreased rates of chronic illness, such as heart disease and diabetes.  (1)

  • Aids digestion.  Celery juice is is an alkaline food and a good source of pectin-based polysaccharides which may help strengthen the lining of the stomach and reduce the risk of stomach ulcers. The flavonoids found in celery may also help stop the growth of gut bacteria that may cause inflammation.
  • Cardiovascular. Rich with magnesium and potassium, celery may help reduce blood pressure.
  • Vitamins and minerals.  Celery is a good source of folate, potassium, zinc, vitamin A and vitamin C. Celery is low in calories, fat, cholesterol and carbohydrates.

Benefits of celery juice on empty stomach

According to Anthony Williams (best-selling author known as Medical Medium) who started the celery juice craze, in order to reap the most of celery juice benefits, he recommends drinking 16 ounces (2 cups) of celery juice on empty stomach first thing in the morning.  He also suggests waiting 20-30 minutes before eating or drinking other foods.

My personal experience with celery juice

The first time I drank celery juice I found it to be a little bitter. But then I added some ice and a squeeze of lemon and prettied my drink up with some fruit.  Adding ice dilutes the juice a bit, which makes it much more pleasant for me to drink. I’ve been drinking celery juice for a couple of weeks and it has now become routine for me.  I feel like I have more energy and my skin feels plump and looks healthier.

When choosing celery at the market, you want to make sure the celery stalks are firm and the leaves fresh, green and sturdy.  It’s best to store celery whole and intact in the refrigerator. Only rinse and chop the celery just before using so you don’t lose any of the nutrients. Celery will stay fresh for about 5-7 days in the refrigerator, then it starts to wilt and lose nutrients. Celery juice stays fresh in the refrigerator for about 1 day.
